How do you replicate a lovely dish you have eaten
I had a delicious dessert yesterday and I was trying to work out how it was made. The patron , who I know well.came over to ask if there was a problem. I said it was lovely and I wanted to try and replicate it. She aske me how I thought and I told her. She just grinned and said I was 99% correct but I had missed the magic ingredient - chestnut honey! So now I can try myself.
i am afraid I am fairly shameless about asking chefs for recipes, or at least guidelines and very few flatly refuse. M thinks I am shameless but as I say "Shy bairns get nowt"
