fruit cake mix...

I was all set up to cook my Christmas cake overnight last night as it needs 10/11 hours in the simmering oven then realised I didn't have the mixed spice, I did search through my spice rack but didn't even have the ingredients to made it up ...it was too late to go out,11pm, and in all honesty I was tired so left it.

This made me wonder if I really need to be mixing the cake mix just before it goes into the oven or can it be prepared a few hours before hand.
Does anyone do this?

Hi Missk.

With fruit cake mix, I would imagine it does not matter when you make the mix.
Other risen lighter cakes, I would think you need to make it just before baking.

Several bakers here who will know for sure.

As long as you haven't added the eggs/liquids it should be fine. I mix all the dry ingredients, in another bowl I soak all the dried fruit in the alcohol and then combine the two next day adding the eggs as appropriate. It really depends on the recipe you are using.

I always mix my PUDDINGS and leave the mixture overnight to soak all the goodies up. However Stir-up Sunday is not until November 26th , so plenty of time!

Joan, did you almost mention Christmas there?

I'm under orders to do the stir up sunday this year.
I think I've got your recipe. In fact I'm sure I do. Nearer the time I'll make certain.

Thank you.....I've just made up the mix and will wait until 22.30/23.00 to put it in the oven.

Think I'll also have a go at making a Pudding this year, so will be on the look out for a tried and tested recipe.

I spotted this Festive Nougat in the Christmassy stuff section of John Lewis, could not believe the price. £6.99 a slice, making the whole round £167.76. Happy Christmas.

Sakkarin ... there's a sweetie shop in Cromer that sells wedges from a selection of nougat cakes like that all year round ... one in St Ives in Cornwall too ... both seasides that we frequent :oops: :thumbsup

Anyone got a good recipe for nougat?

Sorry Suffs, I did make turron ice cream once. But it wasn't amazing, so I shan't bother. Nice enough.
