Lisbon Medieval Apple Doughnuts

Travelling to Lisbon to provide a guided tour to my clients, is always an amazing pleasure .. One of my fave sweet tooth pleasures with a double Espresso, are the Apple Doughnuts I have had close to the Bridge at an outdoor Café ..

The majority of the desserts in Portugal hail from the Convents of the Medieval Ages .. This doughnut as well ..

As promised to Renée, here is a grand treat from Lisbon ..

Recipe Ingredients ..

4 Eggs (small ) Eco Bio
3 Large Golden Delicious Apples
1 / 2 cup sugar
3 / 4 cup Anise or Apple Liquor
2 / 3 cup milk ( do not use fat free )
1 / 3 cup Portuguese or Spanish Evoo ( olive oil )
1 3 / 4 Cup Eco / Bio unbleached All Purpose or Chick Pea flour
1 1 /2 Tsps. Baking powder
1 / 4 tsp Cinammon powder
Oil of choice for Deep frying
Confectioners sugar to dust
A Deep Fry Thermometer
1 médium sized Lemon ( for the juice )

Method:

1) Peel and core the apples and slice into thin rounds ( 4 mm. thick ) and toss with 1 / 8 cup sugar, anise or Apple liquor and the juice of 1 medium lemon ..
2) Let marinate a half hour ..
3) Now whisk 1 / 8 cup sugar, the milk, the Evoo, and the eggs in a large glass bowl ..
4) Sift in the flour and the baking powder and the cinammon ..
5) Stir until velvety and let sit 30 mins.
6) Pour enough frying oil into a large skillet and heat to 180 C degrees ..
7) In batches, dip the drained Apple slices into the Batter and Deep fry for 3 minutes until Golden ..
8) Use a slotted spoon and transfer to paper towelling .. Drain the oil thoroughly.
9) Dust with a bit of Confectioners Sugar ..

There are more Apple pastries to follow .. Ha Ha !! I had one that is like a Puff Pastry in the form of a Streudel that was to die and go to heaven for !

These are perfect for a rainy day !

Simply a heavenly sweet treat with Espresso or even an Earl Grey tea ..
