Sicilian Fresh Fish with Caper Salad

Postby Alexandria » Sun Dec 03, 2017 3:03 pm

This fish dish called Pesce Spada con Insalata di Capperi, hails from the Island of Sicilia ..

I am using fresh Swordfish in this recipe however, any firm white fish shall work wonderfully ..

Grilled Sword Fish with Caper Salad ..

1 Tblsp Italian Bio Evoo
1 tablesp fresh mint or spearmint
1 1 /4 tsps minced garlic
1/4 tsp white wine vinegar
1 / 4 tsp Balsamic vinegar
3 three and 1 / 2 ounce jars of capers, rinsed and drained
1 / 4 cup raisins

6 swordfish steaks or filets, each 1 inch thick
6 tblsps of fresh squeezed lemon juice
3 tablesps of fresh minced parlsey

1) Whisk the 1st five ingredients in a medium sized glass bowl to blend.
2) Lightly toss in the capers ..
3) Let the salad stand 30 minutes at room temperature ..

The Fish:

1) Lightly brush the fish with Evoo and salt to taste ..
2) Grill the swordfish until just opaque in center .. ( can be done stove top or oven grill or BBQ )
3) Grill 3 minutes per side for fresh fish ..
4) Drizzle the lemon juice over fish ..
5) Sprinkle the minced parsley over the fish and a grind or two of Black, white, rose and green peppercorns.

Spoon the caper salad along side this fish on large square or round plates ..

Serve with Prosecco or a Sicilian white wine or a Champagne or Cava ..

Simply lovely ..

Have a wonderful day .. :rudolph1

What a delicious recipe, Alexandria! I will make this very soon, because I have a couple of jars of capers. I just need the fish, parsley and mint!

I reckon with swordfish that the main trick is cooking it to the right amount of "doneness", so is either great or decidedly not great if either over or under.

Capers go very well in a thyme stuffing for whole trout incidentally. Do you get trout, Alexandria, it being a freshwater river fish?

I'm a fan of parsley and lemon with bream.

Mint I find can be overpowering or an unnecessary taste, e.g. wouldn't lemon and capers and parsley be enough even for "meaty" swordfish?

Jeral,

Fresh Wild Trout: If wild Navarre Trout is available at the La Mercat de La Boqueria ..

We do not eat farm fed fish which is widely available in many parts of Spain ..

It is predominately available in Navarre, at the border of the Pyrenées.

Have a lovely evening .. :tiptoesanta

Jeral,

The spearmint ( hierbabuena) which I employ is in the salad, not on the swordfish .. It is quite different than mint, much lighter and provides a refreshing taste with the capers and raisins.

Have a nice evening ..

I really enjoyed making the dish, Alexandria, but I couldn't get spearmint, so bought the ordinary mint. I plan to grow it next year. The dressing was so tasty and the sweet raisins went so well with the bitterness of the capers. I'm not too happy with the presentation, but it was a delicious meal!

WOW Renée,

It looks fabulous ..

Yes, I agree 100% that the raisins in the Caper Salad provide a lovely balance between sweet and bitter ..

Spearmint is extraordinarily refreshing to this type of salad ..

The fish is remarkably outstanding ..

Thank you for posting the photograph.

I shall be off work and need to re-read so I could post some of my photographs. I have to find out how to do from my Mobile Phone or Tablet ..

Have a lovely lovely evening ..

Yes, I was very happy with the dish, Alexandria and I'm pleased that you think that it looks alright!

I have a tablet and also don't know how to post photos when I'm away. but I have a book with about 250 pages with colour pictures and instructions for doing many things with the tablet! I just need to start reading it more.

Have a lovely time in Madrid!
