Decision made.
I shall make flour mini pittas with chicken.
And use rice pancakes for the veggie ones. Which are fiddly to work with, but are absolutely clearly gf for buffet diners.

Not trying to be a droning voice, but please make the rice pancakes and stash them away first, so before scattering airborne flour around.

It's probably too late, but I've just remembered G-F pizza bases made of squashed cauliflower (all recipes on the internet for cauli pizza are basically the same).

It's always good to know there'll be something eatable when everyone else is tucking in. I'm sure your efforts will be much appreciated, probably more than you might think.
