That does look good, Mark. I did once have a piece at a restaurant on the Keys, but it was rather sweet. From what I've just read, it can vary.

Good recipe spot, Mark.
I liked the tip to simply use foil pie dishes.

Gosh - that brings back lovely memories for me. My late Mum used to make the most wonderful key lime pie. She always used to get the flavour spot on - not too sharp, not too sweet. She often used to make chocolate leaves to decorate it - she would find suitable small leaves from the garden, wash and dry them and then paint them with melted chocolate. After the chocolate had set, when the leaf was peeled off, you'd be left with a lovely imprint of the leaf.

I've done chocolate leaves like you mum's as well in the dim and distant past. I think I used a rose leaf, and it was so effective. Not that difficult to do either.

What I was disappointed in was using the crust in the tin pan vs the smooth edges of the tart tin.
