Sunday´s Lunch: Risotto with Broccoli ..
A very simple and wonderful versión ..
Here is a tiny récipe for 2 to 4 ..
300 grams of Italian Carnaroli Rice
100 grams of Broccoli .. ( I use Green Bio )
50 grams of red ripe tomatoes de-seeded and peeled
1/2 of a small onion or 1 shallot médium sized
1 dried "guindilla" ( dried Capscium chili Pepper - Cayenne shaped like a 1/2 inch horn ) or red pepper flakes.
50 grams of Reggiano Parmesano or Pecorino grated ..
salt (to taste )
4 tablespoons Evoo
2 tablespoons of butter French style (82% butter fat or similar )
freshly ground black pepper to taste.
Home made vegetable stock broth - just enough to cover the rice ( approx. 1 standard measuring cup, 2 cups )
1) Separate the stems from the "floretes" or broccoli clusters.
2) Submerge into a large saucepan in boiling salted wáter and simmer for 10 minutes. Drain all the wáter .. and dunk into cold wáter .. Re-drain in 5 minutes.
3) Peel and mince the onion or shallot ..
4) De-seed the tomatoes and peel them, if you wish to ..
5) In a "pallera" metal pan or an earthenware "cazuela", a paellera shaped clay stove top deep vessel without handles, or a skillet and Sauté the onion and the tomatoes in the Evoo gently until the tomatoes are broken down into a light sauce like texture.
6) Add the rice with just enough vegetable broth from vegetable stock to cover and adjust the salt and the ground pepper & the crushed red chili pepper ..
When nearing tenderness, Add the broccoli ..
7) Cook until the rice is tender but not mushy.
8) Just when the rice is tender and the broth has been absorbed, add the butter and cheese ..
Enjoy .. Lovely tiny dish and highly versatile ..

I will make the Risotto with Broccoli when I return home, Alexandria. I do have a pallera and made a paella a few weeks ago. I put some in the freezer and had the last portion tonight.
