I had just a gin & tonic but for a change made with Fentiman's tonic
I didn't much like the tonic straight, but with gin it was
it has some of the same botanicals in it as the gin does, and I think you can even getw away with putting in slightly less gin, which is great in the hot weather.
recommended - if you can find it, not a lot of stockists

The watermelon Bellini was very good, cooling and different. For two glasses you simply blitz a cup of cubed seeded watermelon add a measure of vodka and top up with sparkling wine. If you top the glass with a thin sliver of melon with skin on it looks lovely too.

I used to buy Fentimanns ginger beer in the UK - great for Moscow Mules - but I have never tasted their tonic.

Here is one excellent Friday night cocktail recipe-The Modernista
The Modernista, also known as the Modern Maid Cocktail, is a scotch/absinthe cocktail. This beverage is not for the faint hearted since it is challenging to make due the fact that Swedish Punsch is a hard to find ingredient. Nevertheless, you can use any rum-flavored liqueur to take place of the Swedish Punsch. Aside from that, any cocktail with a Scotch base is difficult to mix with other ingredients unless you know what you are doing. For this reason, bars lounge and tiki bars don’t usually add this beverage into their menus.
However, the Modernista is a tasty cocktail. Making this cocktail could be an ice breaker if you want to impress someone on how you searched the four corners of the world just to find the Swedish Punsch. With the rum, scotch and punsch into this drink, you get be on a romantic evening.
Ingredients:
2 oz Scotch
1 tbsp absinthe
½ oz Jamaican rum
½ oz Swedish Punsch or any flavored rum
½ oz lemon juice
2 dash of orange bitters
Preparation:
Add all ingredients into a shaker with ice.
Strain and pour the mixture into a chilled cocktail glass.
Add a twist of lemon.

I am sure M would rather like that one but I can't do Scotch.
It sounds like a bit of a test to assemble the ingredients as ruthcrowder said!
Here is a revival for us tonight - mostly because we have grapes coming out of our ears and I found a punnet of raspberries in the fridge.
La Vie en Rose (serves 4)
150g/5 oz raspberries
Juice of 1 lemon
8 ice cubes
100ml/3 fl oz grape juice
150ml/5 fl oz orange juice
Tonic water or sparkling wine
Sieve the raspberries and add the lemon juice.
Take a cocktail shaker or screw-topped jar and chill with six of the ice cubes. Tip out the water and add two more cubes. Add the raspberry puree, the grape juice and the orange juice and shake well.
Pour into 4 tall glasses and top up with chilled tonic water or sparkling wine
