Hazelnut Cod Fish (Baccalà Frecole)

Hazelnut Cod Fish (Baccalà Frecole)
This lovely light lunch comes from Napoli, and the name in Napolitan Dialect is "Baccalà Frecole", signifying bread crumbs.
It is very common in the regions of Irpinia and Avellino and it is also prepared with almonds or walnuts depending on the region of Campagnia ..
Here it is .. ( Oven or Satuéed stove top ) ..
1 / 2 Kilo or 500 grams of Fresh or Salt cod
100 grams of hazelnuts or almonds or walnuts ( or pistachios )
100 grams of day old bread ( For the bread crumb mixture )
1 clove of garlic minced
A sprinkling or half a tsp. of dry Oregano
Salt and Freshly ground pepper to taste
3 tablespoons of Italian Evoo
1 tiny red dried guindilla or capscium horn shaped chili pepper ( crumble in bread crumb mixture ) or red pepper flakes if you prefer ..
1) Ask your fish monger to slice the fish in thick cubes or squares.
2) In a mortar with a pestle, de-shell the hazelnuts or almonds or walnuts and pound them into a powder.
3) Grate the day old chapata or baguette and put the crumbs into a large glass bowl ..
4) Add the garlic and the oregano, chili pepper and the finely ground hazelnuts. ( can use a grinder to grind the hazelnuts )
5) Heat a skillet or sauté pan with the Evoo .. or pre heat oven as I did today .. Do grease the cooking vessel for the oven ..
6) Pat dry thoroughly the fish with Kitchen Paper towelling and Salt the fish and give it a good dose of freshly ground black pepper.
7) Dust the fish squares into the bread nut crumbs and sauté ..
8) I have also prepared in the oven, (today) at 180 C degrees for 20 minutes ..
9) Delicious and simple ..
Have a healthy, successful & fabulous New Year just ahead ..

Looks interesting Alexandria, but there's something amiss there. 430g of crumb for 500g of fish?
And 30g of oregano? That's more than two of these 14g jars full...

I love hazelnuts, Alexandria, so will definitely make this on my return home. I can only get fresh cod locally, but could I coat the fish with salt and leave it for an hour or two? This would firm it up.

Always a pleasure to receive such lovely messages.
1) It is not necessary to salt up the cod fish if using fresh cod ..
2) Have the fish monger slice it "in thick chunks" - it is quite firm this way ..
3) Prepare the hazelnut & bread crumb mixture in a large bowl .. You can employ spices according to taste of course. I have used various Mediterranean dried spices / herbs too ..
4) I also drizzle a bit of lemon juice on the cod too ..
5) It is one of those simple lunches .. I have tried it too with walnuts and pistachios and almonds but I like it best with hazelnuts and since we are growers ( Tarragona - just south of Barcelona ), they are less expensive too ..
6) The breading is "light" as I dust however, I have also breaded using 2 lightly beaten eggs too .. However, I prefer the light "dusting" ..
7) I also preferred it oven baked verses sautéed ..
8) It is up to you .. Sautéed or baked in oven ..

I have 3 hazel/cob nut trees, all of which produce nuts. For me, the skill is not in growing them (try to stop them growing!), but in harvesting the nuts before the pesky squirrels get them!

I remembered just before I went to sleep, that I should have cut the cod into chunks. Oh well, next time! I also think that Patatas Bravas might have gone well with the fish.

I am giggling about the Patatas Bravas ..
Of course, we have a family recipe .. I do not eat too too often however, when my grandsons ( two: age 7 is Jordi and age 8 now is Gerard ) come to visit, I prepare ..
I serve this dish with a veggie to keep it light .. Broccoli or cavolo black cabbage or spinach or a salad of radicchio & rocket & kress with a vinaigrette .. or a lovely light Angel Hair Pasta works marvelously too ..
And a good white wine !! or Prosecco or Cava ..

To be quite honest, Alexandria, I wasn't over keen on the potatas bravas and haven't made it since. Perhaps it's a dish that children enjoy!

I must go as we are in Madrid with a few of our Staff, at The International Fitur Travel & Tourism Convention and then on the 22nd is the Madrid Fusion Gastro Eno Trade Fair .. So we will be in Madrid until 26th ..
