Can't it just
75 cl of dry cider with 5 cl calva and 3 tbsp sugar (I think that is too much) Add two apples cut into thin strips and a sprig of lemon balm. Chill for 2 hours. Put a thin slice of apple and ice cubes in each glass and top up with the mixture.
I always make Bellinis with proseco as I too think it is a waste of champagne.

Joan, that cider and calvados mixture sounds very good!
I agree about Prosecco for Belinis - it is the correct thing to use, I believe, as Belinis are an Italian concoction.
We bought some Liqueur No43, while in Spain a while back - as we discovered it was the 'secret ingredient' in the excellent White Sangrias we drank there! Has anyone else tried this?

A good inexpensive apero is a kir Normande
A small shot of creme de cassis topped up with cidre bouché (fizzy French cider) in a champagen flute
Even nicer with creme de mures IMO - apple & blackberry!
First had this in Falaise about 10 years ago

I am absolutely with you on creme de mures Sue. I also like creme de pêches and DD is very fond of creme de châtaignes - sweet chesnut, with dry while wine though it doesn't rock my boat

OO Sue - I could fancy that! I haven't had Zubrowka for ages.
On Friday we had Pimms - a friend brought some from the UK so of course we had to share!

Pimms tonight for me! With strawberries and mint from the garden. I can close my eyes while drinking it, listen to the rain and dream of summertime!

I think tonights cocktails will depend on the tennis. M is not an enthusiastic cocktail maker so if he has to do it because i am glued then it will be a G & T or a rum and coke.

So right! Couldn't quite wrap my head around it so just opened a bottle of Prosecco and had another Bellini!
Promise I will try to arrange something for Sunday - but i think it might involve Kirsch!!!

My basil is rampant at the moment so OH made a new cocktail to help with the problem. He muddled some cucumber and basil, added sugar syrup and juice of half a lime, into the shaker with some silver tequilla then strained into margarita glasses, garnished with baby basil leaves and a slice of cucumber. It was very refreshing, though hasn't made much inroads on my basil! I don't know if it has a name, anyone else heard of it?

I was having a clear out of the drinks cupboard and noticed I've got leftover cherry brandy. This was a Christmas present last year. We are not overly keen on it straight! Any ideas for a cocktail for Friday night to use it up?

It is Friday and hot hot hot and the family are here. DD brought a recipe from VA for a watermelon Bellini - so she is making some tonight. We are using Prosecco rather than Champagne. I'll post the recipe once i have tasted it
